New Year, Same Vegan

Happy New Year all!

2017 is going to be a great year. Mine has already gotten off to a great start; I’ve seen at least 50 dogs since the near year has started and I got to spend my New Years Eve visiting my boyfriend in his new city, Oakland, California.

I wanted to start off my New Year by helping those of you who want to change their diets or lifestyles. Now this is not to persuade anyone to become vegan or vegetarian, this post is just a guide with some great products and recipes for those of you who are interested in the veggie way of life.

Being a college student it has been harder being vegan because preparing meals myself is important to me but finding the time with school work and extra curricular can sometimes be challenging to balance, so I wanted to share some quick, easy, and healthy meals.

Here are some of my favorite daily meals:

Breakfast:


So Delicious Coconut Milk Yogurt, with granola and chia seeds

You can find these at Meijer, Fresh Thyme, Whole foods, and possibly your local health food stores. Sometimes, it’s hard to find different flavors of this yogurt but I have not tried a flavor I didn’t like yet. My favorite is chocolate – tastes just like chocolate pudding!

Organic oatmeal

With flax seeds with cut up banana or pear.

Or everyone’s favorite, AVOCADO TOAST

I like my avocado toast on Ezekiel bread with roasted garlic seasoning, cumin, salt & pepper, and a dash of lemon!

Lunch/Dinner:


Tofu stir fry

I always use extra firm tofu when making this because for me it’s the best tofu to toss in my wok. One of my favorite sauces are from Trader Joe’s, the General Tso or their Sweet Chili.

Kale burger with avocado on a bed of rice or lentils 

With this meal, I usually add cucumber, spinach or arugula, tomato and balsamic vinaigrette to make a small side salad with it

Veggie wrap 

Typically I get my wraps from Trader Joe’s; my favorite are the chia seed wraps. I add as the  big protein either extra firm tofu or “chicken” tenders. Then add hummus or mashed avocado as the spread. Then whatever veggies you like; I enjoy cucumbers, onion, tomato, and spinach. Easy. Quick. AND delicious.
