Vegan Lentil Soup Recipe

Cozy up on these cold winter days with some warm lentil soup. Follow the recipe below!

Lentil Soup Recipe-2

 

 

Prep Time: 10 minutes

Cook Time: 20-25 minutes

Serves: 5-6 people

 

 

 

 

STEPS 1 – 8

Step 1: Place whole package of steamed lentils or 2 cups of dried lentils in a large pot with 32 oz carton of vegetable broth on medium heat

Step 2: Start chopping up your veggies:

  • 1-2 carrots
  • 1 small sweet onion
  • 2 stalks of celery
  • 2 hands full of spinach
  • 2 hands full of kale
  • 2 cloves of garlic

Step 3: Place chopped vegetables into pot and add:

  • 1/2 teaspoon of salt
  • 1/2 teaspoon of pepper
  • 1/4 teaspoon of cumin
  • 1/4 teaspoon of paprika
  • 1 teaspoon of parsley
  • 1 teaspoon of oregano
  • 1 teaspoon of rosemary

Step 4: Mix veggies and spices into pot

Step 5: Boil for 10 minutes

Step 6: Add 2 tablespoons of olive oil and 2 cups of water

Step 7: Simmer for 15 minutes and stir occasionally

Step 8: Enjoy and serve with a warm french bread baguette

What’s great about this recipe is that you can add anything you want and how much you want of your ingredients.
